Kabob Koobideh

Ingredients

  • 2 cups of Basmati Rice
  • 1 pound of ground beef
  • 2 yellow onions
  • 1 Tbsp. each of Salt, Pepper, Cumin, Turmeric
  • 4 tomatoes (optional)

Instructions:

  1. Grate the onions.
  2. In a mixing bowl, combine the ground beef with the grated onions. Add salt, pepper, cumin, and turmeric. Mix thoroughly until all the ingredients are evenly distributed.
  3. Shape the beef mixture into oval-shaped kabobs or patties.
  4. After prepping the kabob, cook the rice: rinse the basmati rice under cold water to remove excess starch. Bring two cups of water to a boil before adding the rice and salt. Reduce the heat to low and cook for about 15-20 minutes.
  5. While the rice is cooking, heat a pan over medium heat and add oil. Once hot, place your patties in the pan and cook until golden brown (around 7 minutes on each side).
  6. To serve, plate the rice and arrange the kabob on top. Optionally serve with roasted tomatoes for added flavor.
