Breakfast Sandwiches

This is really more of a guideline than a recipe, but this is what my wife whipped up a few weeks back on a chilly morning when we were looking for a warm way to start the day.

Ingredients

  • Soft rolls (King’s Hawaiian type sweet rolls; we got ours at Trader Joe’s)
  • 4-5 eggs (for 6 rolls, could go lighter on that), scrambled with salt & pepper to taste
  • 1-2 slices of Canadian Bacon per roll, chopped
  • ½ small onion, minced
  • Cheese, sliced
  • Butter

Directions

  1. Sautee the onion in butter on medium to medium-high heat, until soft and beginning to brown
  2. Add chopped bacon and cook until warm
  3. Reduce heat and add eggs; cover and cook until mostly solid (do not scramble)
  4. Use spatula to break into sandwich-sized squares; flip each to complete cooking.
  5. While cooking the eggs, above, cut the rolls, toast, and add cheese to each side
  6. Insert cooked egg mixture and add hot sauce if you like
