Pasta Primavera

Ingredients

  • 8 oz. linguini
  • 3 T butter
  • 1 T olive oil
  • 1 large zucchini, julienned
  • 3 large carrots, julienned
  • ½ yellow sweet onion, chopped
  • 2 teaspoons minced garlic
  • 12 cherry or grape tomatoes, quartered
  • ¾ cup heavy cream
  • ¾ cup grated parmesan cheese, plus ¼ cup reserved
  • 1 T chopped fresh dill

Directions

  • Fill a large pot with water. Lightly salt the water and bring to a boil. Add pasta and cook 8-10 minutes and drain. Set aside.
  • While pasta is cooking, melt butter in a large skillet over medium heat and add olive oil. Sauté zucchini, carrots, and onions until tender. Add garlic and tomatoes, stirring frequently (2-3 minutes). Remove skillet from heat and slowly stir in heavy cream. Return to heat and add parmesan cheese and dill. Stir until thickened. Add cooked pasta and mix well. Top each serving with reserved parmesan cheese.
