Coleslaw

Serves 10 to 12

Ingredients

½ cup mayonnaise 1 Tablespoon granulated sugar * ¼ cup milk ¼ cup buttermilk 2 ½ Tablespoons lemon juice 1 ½ Tablespoons white vinegar ½ teaspoon salt ½ teaspoon pepper 8 cups finely chopped green cabbage (about 1 head) 1/2 cup shredded/grated carrot (about 2 medium carrots) 2 Tablespoons minced onion

Directions

1. Chop or shred cabbage to your texture preference, place in large bowl. Grate/shred carrots and mince the onion and add to bowl.

2. Combine mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt, and pepper in a small bowl and whisk until smooth.

3. Pour dressing over cabbage and stir gently to mix well.

4. Cover and refrigerate for at least 2 hours before serving.

* NOTE: Some people prefer a sweeter dressing. This can be accomplished by increasing the sugar to as much as 1/3 cup, and/or substituting Miracle Whip for the mayonnaise. Experiment, and find what works best for your family!
