Chopped Liver
Liver is a polarizing ingredient, but those of us who like it a lot. This was a holiday staple for me growing up, so it always reminds me of happy events with my family.
Ingredients
- 1 to 1 ½ pounds liver (beef or chicken)
- 3 eggs
- 2 large onions
- Oil, salt, pepper
Directions
- Hard-boil the eggs Slice onions and fry in oil until browned.
- Set aside in a bowl or dish.
- Fry the liver in the leftover oil from the onions (add more if needed).
- Remove “skin,” let cool, and cut into large pieces.
- Using a meat grinder, grind the liver, onions, and eggs together.
- Add salt, pepper, and oil to taste. If needed, add 1-2 oz. water for texture.
