Chopped Liver

Liver is a polarizing ingredient, but those of us who like it a lot. This was a holiday staple for me growing up, so it always reminds me of happy events with my family.

Ingredients

  • 1 to 1 ½ pounds liver (beef or chicken)
  • 3 eggs
  • 2 large onions
  • Oil, salt, pepper

Directions

  • Hard-boil the eggs Slice onions and fry in oil until browned.
  • Set aside in a bowl or dish.
  • Fry the liver in the leftover oil from the onions (add more if needed).
  • Remove “skin,” let cool, and cut into large pieces.
  • Using a meat grinder, grind the liver, onions, and eggs together.
  • Add salt, pepper, and oil to taste. If needed, add 1-2 oz. water for texture.
